Ingredients3 cups flour
3 tsp baking powder
1 tsp baking soda
½ - 1 cup sugar (to taste)
1 can light coconut milk
¼ cup molasses
50g butter, melted and cooled
Pinch of salt (optional)
MethodHeat the oven to 200oC.
Mix all dry ingredients together.
Add the wet ingredients and mix well.
Pour into muffin cups and bake for 15-20 minutes, or until a skewer comes out clean.
Makes 15 cakes.
